Quinoa as Comfort Food

1/2 cup quinoa
1 cup water
2 teaspoons miso paste
1/4 cup pine nuts, toasted
large handful of greens: parsley, kale or spinach

Bring quinoa and water to a boil. Lower heat, add miso and let dissolve. Set heat to Low, cover and let simmer for 12 minutes or until water is completely absorbed.

While it's simmering, toast the pine nuts and put into a serving bowl. For parsley and spinach, rough chop a handful and toss into the bowl of pine nuts. For kale, lightly sautee kale in small amount of olive oil until tender, then toss into serving bowl.

When quinoa is done, toss it with the nuts and greens and serve.

Also good with:

MARINATED WHITE BEANS
1 can cannellini beans
2 Tablespoons (or so) red wine vinegar
3 tablespoons (or so) olive oil
Handful of dried basil
Handful of dried dill
1 garlic glove mashed (leave whole)

Mix together in plastic container and let sit overnight. Then mix with quinoa (minus the miso). You can also add parsley and toasted pine nuts.
